Every South Indian home has its own version of milagai podi. This is the one I grew up with, made exactly the way my amma prepared it.


🛒 Ingredients

  • 1 small piece asafoetida (hing) (or ½ teaspoon hing powder)
  • 1 small katori (about ½ cup) urad dal
  • 1 small katori (about ½ cup) chana dal
  • ¼ cup white or black sesame seeds
  • ¼ cup dry grated coconut
  • ~5-10 whole dried red chilies (adjust according to your spice preference)
  • 2–3 Kashmiri dried chilies (optional, for a rich red color)
  • 1–2 teaspoons jaggery powder (or one small piece of jaggery)
  • One small piece of dry tamarind (about the size of a cherry tomato)
  • 2 teaspoons salt (adjust to taste)
  • 1 teaspoon oil (for frying the chilies)

👩‍🍳 Method

Step 1 – Roast Each Ingredient Separately

The secret to a flavorful podi is roasting each ingredient individually.

  • Roast the hing until aromatic.
  • Roast the urad dal until golden brown.
  • Roast the chana dal until golden. Be careful not to burn it.
  • Roast the sesame seeds until they begin to splutter.
  • Roast the dry grated coconut until lightly golden.
  • Heat a teaspoon of oil and fry the red chilies until crisp and aromatic.
  • If using Kashmiri chilies, fry them along with the regular chilies.

Transfer each roasted ingredient to a plate and allow everything to cool completely.


Step 2 – Grind

Add all the cooled ingredients to a mixer.

Now add:

  • Jaggery
  • Tamarind
  • Salt

Grind until you reach your preferred texture.

Our family enjoys it slightly coarse, but you can grind it finer if you like.


Step 3 – Store

Allow the podi to cool completely after grinding.

Transfer it to a clean, dry, airtight glass jar.

It stays fresh for 4–6 weeks when stored in a cool, dry place.

Always use a dry spoon.
